Asado is barbequed meat usually of a pig. The pig is cut open and gutted, all the pig parts are usually eaten or used for other things. No part of the pig goes to waste in Argentina. After gutted, the spread open pig from the inside is put on a stake and put in the ground and held over a fire and cooked for 6 to 7 hours so the meat falls right off the bone and is extremely tender. Then it is smothered in barbeque sauce and other spices.
